Spanish Baked Eggs

Teresa turns everyday staples into a delicious comfort meal with Australian Golden Eggs.


Ingredients:

  • 1 tablespoon extra-virgin olive oil
  • 1 onion, finely sliced
  • 2 cloves of garlic, chopped
  • 2 x 400g tinned chopped tomatoes
  • 1 x 400g tinned butter beans or cannellini beans
  • 1 generous teaspoon of smoky paprika
  • 1 red capsicum
  • 4 free range eggs
  • 60g of feta cheese
  • 2 sprigs of fresh oregano or parsley, chopped
  • Sea salt flakes

Method:

  • Pre-heat your oven to 180°C fan forced.
  • Cook onions until soft with the olive oil.
  • Add garlic, tomatoes, beans, paprika and red capsicum. Season with salt and pepper. Cook, stirring, for 10 minutes or until hot.
  • Make 4 small wells in the tomato bean mixture. Break the eggs, one at a time, into each well.
  • Bake in the oven for 10 minutes or until the egg white is cooked and the yolks are slightly runny.
  • Garnish with feta and parsley. Serve with sourdough and enjoy.
