Story: Roast Chook Slaw with Orange Sesame Dressing

Alex shows us a delicious meal using a store-bought roast chook!
Ingredients:
- ½ store bought roast chicken
- ½ cabbage head
- 1 spring onion
- Handful crispy noodles (or cashews)
- Bunch mint
- Bravo apple
- 2 oranges
- Red wine vinegar (or any vinegar you may already have)
- 1-2 tablespoons Sesame oil
Method:
- Tear away at the skin of the roast chook and shred the chicken and set aside.
- Finely slice the cabbage and place it in a bowl.
- Thinly slice the bravo apple and place it in the bowl with the cabbage.
- Chop up the spring onion and place it in the bowl.
- Tear up some fresh mint and toss it into the bowl.
- Toast up the cashews on a low heat in a pan and add in to the bowl once cooled down. You can crush them into smaller pieces or leave them as they are. (Use crispy noodles if anyone has a nut allergy!)
- Add in the shredded chicken.
- To make the dressing, squeeze the juice from the oranges into a small bowl (judge the amount of orange juice you would want to use by eye).
- Add a splash of red wine vinegar to the orange juice (alternatively, you can use any vinegar you have at home).
- Into the small bowl, add in the sesame oil, a pinch of sugar, and a pinch or two of salt. Then mix.
- Toss the salad and lay it out onto your serving bowl. Finally, pour over your dressing and enjoy!
