Teresa shares her healthy Chocolate Cake!

Ingredients


Cake

  • 8 eggs
  • 1 cup of extra virgin olive oil
  • 1 cup of maple syrup
  • 1 cup of plant-based milk
  • Generous pinch of salt
  • 2 Cups Almond meal
  • 1 Cups Dark cocoa powder
  • 3 generous teaspoons of baking powder
  • 1 tablespoon of vanilla essence

Icing

  • 400g avocados
  • ½ cup maple syrup
  • ½ cup coconut yoghurt
  • ½ cup dark cocoa powder
  • Generous sprinkle of salt
  • Melted block of 90% dark chocolate


Method


Cake

  • Preheat oven to 160°C and line cake tins with baking paper.
  • place eggs, oil, maple syrup ad plant-based milk and salt into a bowl and whisk until all combined.
  • Add in almond meal, dark cocoa powder, baking powder and vanilla essence. Whisk again until combined.
  • Pour batter into 2 x 20 cm baking cake tins. (Note: batter will be runny, not thick like other cake batters)
  • Place in oven 30 mins.

Icing

  • Place avocados, maple syrup, coconut yoghurt, dark cocoa powder and salt into a blender.
  • Blend until it is smooth.
  • Once smooth, add in the melted block of 90% dark chocolate and give it a blitz for another couple seconds until all combined.
  • Once the cakes are cooled, ice the cake and enjoy!
