Ingredients
- 2 cups panko breadcrumbs
- Pinch of salt
- ½ teaspoon oregano or a few tablespoons chopped parsley
- 2 swordfish steaks (if too thick, lightly flatten between 2 sheets of baking paper using a mallet/meat tenderiser)
- Plain flour or cornflour (for dusting)
- 2 large eggs, beaten
- 60 ml olive oil (for frying)
- Lemon, to serve
Method
- Prepare the breading station:
- Container 1: flour
- Container 2: beaten eggs
- Container 3: panko breadcrumbs mixed with parsley or dried oregano
- Heat the olive oil in a large pan over medium heat.
- Coat the fish:
- Dredge in flour, dip in egg, coat in breadcrumbs
- Repeat for all fish portions
- Cook:
- Fry each side for 3 minutes until golden
- Drain:
- Remove fish and place on paper towels to absorb excess oil
- Serve:
- With lemon and fresh herb coleslaw
