Teresa makes a delicious soufflé using two kinds of cheese and simple pantry ingredients.


Ingredients:

  • 60g butter
  • 60g flour
  • 500ml (2 cups) milk
  • 6 large eggs
  • 100g grated Gruyere, Comte
  • 30g parmesan, grated
  • Pinch of salt
  • Pinch of nutmeg

Method:

  • Preheat your oven to 200°C fan forced.
  • Melt butter over a medium heat, then add the flour and mix through to form a roux.
  • Pour in the milk and whisk through until thick, smooth and creamy, then remove from the heat, cool slightly for 5 minutes.
  • Whisk the whole eggs in a bowl and quickly add the eggs, grated cheese. Season to taste with a little salt if required.
  • Lightly butter an oven proof ramekin, and coat with a dusting of flour or breadcrumbs.
  • Spoon the soufflé into the dish and bake for 20 - 25 minutes until puffed and golden.
  • Serve immediately with a zingy green salad.
