Story: Easy Cheese Soufflé

Teresa makes a delicious soufflé using two kinds of cheese and simple pantry ingredients.
Ingredients:
- 60g butter
- 60g flour
- 500ml (2 cups) milk
- 6 large eggs
- 100g grated Gruyere, Comte
- 30g parmesan, grated
- Pinch of salt
- Pinch of nutmeg
Method:
- Preheat your oven to 200°C fan forced.
- Melt butter over a medium heat, then add the flour and mix through to form a roux.
- Pour in the milk and whisk through until thick, smooth and creamy, then remove from the heat, cool slightly for 5 minutes.
- Whisk the whole eggs in a bowl and quickly add the eggs, grated cheese. Season to taste with a little salt if required.
- Lightly butter an oven proof ramekin, and coat with a dusting of flour or breadcrumbs.
- Spoon the soufflé into the dish and bake for 20 - 25 minutes until puffed and golden.
- Serve immediately with a zingy green salad.
