Teresa shares her healthy Chocolate Cake!
Ingredients
Cake
- 8 eggs
- 1 cup of extra virgin olive oil
- 1 cup of maple syrup
- 1 cup of plant-based milk
- Generous pinch of salt
- 2 Cups Almond meal
- 1 Cups Dark cocoa powder
- 3 generous teaspoons of baking powder
- 1 tablespoon of vanilla essence
Icing
- 400g avocados
- ½ cup maple syrup
- ½ cup coconut yoghurt
- ½ cup dark cocoa powder
- Generous sprinkle of salt
- Melted block of 90% dark chocolate
Method
Cake
- Preheat oven to 160°C and line cake tins with baking paper.
- place eggs, oil, maple syrup ad plant-based milk and salt into a bowl and whisk until all combined.
- Add in almond meal, dark cocoa powder, baking powder and vanilla essence. Whisk again until combined.
- Pour batter into 2 x 20 cm baking cake tins. (Note: batter will be runny, not thick like other cake batters)
- Place in oven 30 mins.
Icing
- Place avocados, maple syrup, coconut yoghurt, dark cocoa powder and salt into a blender.
- Blend until it is smooth.
- Once smooth, add in the melted block of 90% dark chocolate and give it a blitz for another couple seconds until all combined.
- Once the cakes are cooled, ice the cake and enjoy!
