Alex shares her stunning chickpea salad!
Ingredients
- 1 capsicum sliced
- 1 ½ cans of chickpeas, strained
- Turmeric
- Ground cumin
- Paprika
- Salt
- Rocket
- 2-3 teaspoons of harissa
- 1-2 tablespoons of aqua fibre
- Lemon
- Red onion
- Goats cheese
Method:
- place some oil on a pan at medium-high heat
- Place capsicum on the pan to sizzle
- Add chickpeas to the pan and give it an ice swirl in the pan.
- Add in generous pinches of turmeric, ground cumin and paprika. And give it a stir.
- Tear up some parsley, add to the pan, and give a stir.
- Add in a generous pinch of salt and a handful of rocket.
- For the salad dressing, in a small bowl add in harissa, aqua fibre splash of olive oil and a squeeze of lemon. Give it a nice whisk and add a pinch of salt
- To plate up, lay fresh rocket across the plate, add some sliced red onion and then pile on the chickpeas and capsicum straight over.
- Cromble goats' cheese over the top, add some fresh parsley and finally, add the dressing.
