Story: Mussels with Japanese Curry and Frites

Scott shows us his take on moule-frites with a Japanese twist!
Ingredients
- 1kg mussels
- ½ onion
- 1tbspn Japanese curry paste
- ½ cup milk
- Juice of one lemon
- 200gm fresh fries
- 1 sheet nori
- Salt
Method
- Sautee the diced onion in a pan.
- Once the onion is soft, put the mussels into the pan. Add a little bit of water to the pan to start the steaming process.
- Once the muscles are opened and fragrant, strain them over a bowl and pour the juice back into the pan.
- Add some Japanese curry paste to the juice, give it a stir, and add a little bit of cream.
- Once boiling, season with some lemon juice
- Pour the mussels back into the pan and give them a little toss, coating them in the sauce.
- Take the pan off the flame and drape a sheet of nori over the flame. Once the nori is nice a crisp, break it all up in a mortar and pestle.
- Add some flaky salt to the nori and pound it together.
- Put the mussels into a serving bowl, pile on frites over the top sprinkle on the nori salt.
