Scott shows us his take on moule-frites with a Japanese twist!


Ingredients

  • 1kg mussels
  • ½ onion
  • 1tbspn Japanese curry paste
  • ½ cup milk
  • Juice of one lemon
  • 200gm fresh fries
  • 1 sheet nori
  • Salt


Method

  • Sautee the diced onion in a pan.
  • Once the onion is soft, put the mussels into the pan. Add a little bit of water to the pan to start the steaming process.
  • Once the muscles are opened and fragrant, strain them over a bowl and pour the juice back into the pan.
  • Add some Japanese curry paste to the juice, give it a stir, and add a little bit of cream.
  • Once boiling, season with some lemon juice
  • Pour the mussels back into the pan and give them a little toss, coating them in the sauce.
  • Take the pan off the flame and drape a sheet of nori over the flame. Once the nori is nice a crisp, break it all up in a mortar and pestle.
  • Add some flaky salt to the nori and pound it together.
  • Put the mussels into a serving bowl, pile on frites over the top sprinkle on the nori salt.
