A Cevice-Style Fish Bone Salad, that reduces waste in the kitchen and tastes delicious!


Ingredients

  • One whole fish (fillets reserved for another dish)
  • 1 small red onion
  • 1 red chilli
  • 1 bunch coriander
  • 1 small cucumber
  • 2 red radishes
  • Juice of 1 lime
  • Olive oil
  • Salt
  • Optional: Avocado


Method

  • Fillet your fish of choice. With the fish skeleton, take a spoon and run it down the blade and pull all the meat off the bones and from the head into a bowl.
  • Dice up red onion, red chilli, and coriander and add to the bowl. Mix to make the salad.
  • Slice some cucumber and radish (optional: and avocado)
  • Add some lime juice to the bowl. Half a lime is plenty. Add some salt and stir.
  • Dress with a little bit of olive oil.
  • To plate up, put a small spoonful from the bowl onto a plate and dress with the cucumber, radish (and avocado). Repeat to build the serving on the dish.
  • Serve with tortilla chips and enjoy!
