A Cevice-Style Fish Bone Salad, that reduces waste in the kitchen and tastes delicious!
Ingredients
- One whole fish (fillets reserved for another dish)
- 1 small red onion
- 1 red chilli
- 1 bunch coriander
- 1 small cucumber
- 2 red radishes
- Juice of 1 lime
- Olive oil
- Salt
- Optional: Avocado
Method
- Fillet your fish of choice. With the fish skeleton, take a spoon and run it down the blade and pull all the meat off the bones and from the head into a bowl.
- Dice up red onion, red chilli, and coriander and add to the bowl. Mix to make the salad.
- Slice some cucumber and radish (optional: and avocado)
- Add some lime juice to the bowl. Half a lime is plenty. Add some salt and stir.
- Dress with a little bit of olive oil.
- To plate up, put a small spoonful from the bowl onto a plate and dress with the cucumber, radish (and avocado). Repeat to build the serving on the dish.
- Serve with tortilla chips and enjoy!
