Leftover Chicken Bolognese

Teresa creates a healthy, hearty and flavoursome Bolognese with leftover chicken.


Ingredients

  • 1 tablespoon olive oil
  • 1 carrot, finely chopped
  • 1 stalk celery, finely chopped
  • 1 large onion, chopped
  • 4 cloves garlic
  • 1 x 140 g tin Mutti tomato paste
  • 1 x 400 g tin Mutti chopped tomatoes
  • 1 cup hot water, from the kettle
  • 1 cup leftover cooked chicken, chopped
  • 1 tin brown lentils
  • handful parsley or basil
  • salt to taste
  • Handful spinach, optional
  • Parmesan to serve
  • your favourite pasta to serve - you can sub half the pasta for rice, sweet potato, zucchini noodles, or steamed broccoli

Method

  • Cook the carrot, celery and onion in a large pot with the olive oil for 5 minutes.
  • Add the garlic, tomato paste, chopped tomatoes and water. Partially cover and cook over a medium heat for 45 minutes until the sauce is thick and delicious. At this stage you can also add other veggies like mushrooms or a tin of lentils for added fibre ad protein.
  • Add the cooked chicken, parsley salt and pepper to taste.
  • Serve with pasta, steamed rice or pile over roasted sweet potato.
  • PRO TIP: Add a tin of black beans, a splash of tabasco and a teaspoon of ground cumin and make into healthy nacho. Serve with baked sweet potato, a dollop of yoghurt, some avocado and lime juice. Spread the sauce over a pizza base and top with mozzarella. Bake for 8 minutes for the ultimate pizza.
