Alex shares how to make her favourite food: crispy potatoes! Full of flavour, crunch, and deliciously golden.
Ingredients
- Baby potatoes
- Olive oil
- Parmesan cheese
- Chives
- Chilli oil
Method
- Preheat the oven to 200 °C fan forced
- Chop the bay potatoes in half
- Throw the potatoes into the microwave until they are soft
- Pat the potatoes dry and douse them in olive oil
- Add a generous sprinkling of salt
- Give the potatoes a good roll around before turning them onto a lined baking tray
- Once on the baking tray, put them onto the top shelf of the oven for about 20-30 mins until they are golden in colour
- Once out of the oven, add the potatoes to a bowl with seasonings and toss until fully coated
- Place into a serving bowl
- Grate over some parmesan cheese, chopped chives, and a generous serve of chilli oil
