Alex shares how to make her favourite food: crispy potatoes! Full of flavour, crunch, and deliciously golden.


Ingredients

  • Baby potatoes
  • Olive oil
  • Parmesan cheese
  • Chives
  • Chilli oil

Method

  • Preheat the oven to 200 °C fan forced
  • Chop the bay potatoes in half
  • Throw the potatoes into the microwave until they are soft
  • Pat the potatoes dry and douse them in olive oil
  • Add a generous sprinkling of salt
  • Give the potatoes a good roll around before turning them onto a lined baking tray
  • Once on the baking tray, put them onto the top shelf of the oven for about 20-30 mins until they are golden in colour
  • Once out of the oven, add the potatoes to a bowl with seasonings and toss until fully coated
  • Place into a serving bowl
  • Grate over some parmesan cheese, chopped chives, and a generous serve of chilli oil
