Chef Stuart Laws shares his go-to at-home recipe, the effortless and flavour-packed wok-tossed green beans, candied pepitas, cashew nut puree and orange dressing salad.
Cashew puree ingredients
- 1 cup raw cashews
- 500ml water
- 1 lemon (zest and juice)
Cashew puree Method
- Soak cashews overnight in water
- Place into a blender and puree to smooth
- Season with lemon zest and juice and salt
Mole spiced pepitas ingredients
- 1 cup pepitas
- ¼ cup brown sugar
- 1tsp Mole spice
Mole spiced pepitas Method
- Toast off pepitas until the get golden
- Add brown sugar and caramelise finish with spice and allow to cool
Beans ingredients
- 500gm green beans, topped and tailed
- 50ml olive oil
- 1tsp mole spice
- 1 lemon
- ¼ cup coriander leaves
Beans Method
- Heat the oil in the pan and stir-fry the beans on a medium heat until the start to colour
- Add the mole spice, a squeeze of lemon and the coriander
- Spread cashew puree onto the plat
- Place the beans in a mound on top of the puree and top with candied pepitas
