Roasted Satay Cauliflower Steaks
Ingredients
Roasted Cauliflower Steaks
- 2 large heads cauliflower
- Olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp chilli powder
- Salt, to taste
Satay Sauce
- 1/3 cup natural peanut butter
- 1 tbsp red curry paste
- 3 tsp sweet soy sauce
- 1 tsp sriracha
- ½ tsp salt
- 1 garlic clove, finely minced
- Juice of 1 lime
- ½ cup coconut milk
- ½ cup water
Toppings
- Roasted peanuts, chopped
- Fried shallots, to garnish
- Coriander leaves, to garnish
- Spring onion, to garnish
Method
Cauliflower steaks
- To make the roasted cauliflower steaks, preheat your pizza oven to 200C and grease a baking dish with olive oil.
- Slice cauliflower heads into 2.5cm thick steaks.
- Arrange in a single layer on the baking dish and drizzle with olive oil.
- Sprinkle over garlic powder, onion powder and chilli powder and massage using your hands.
- Bake in oven for 15 minutes then flip carefully, cooking for a further 10 minutes or until golden and crisp.
Satay Sauce
- To make the satay sauce, mix all ingredients in a small saucepan over medium low heat.
- Bring to simmer then cook for 5 minutes, stirring regularly so the bottom doesn't catch, until it thickens. If too thick, just add more water.
- Taste and adjust seasoning.
To Serve
- To finish, plate up your cauliflower steaks, drizzle with a generous amount of satay sauce and top with peanuts, fried shallots, coriander and spring onion.
