Chargrilled orange, bocconcini + basil with miso, chilli dressing

RECIPE


Chargrilled orange, bocconcini + basil with miso, chilli dressing


Ingredients

  • 3 x oranges, peeled and thickly sliced, 1 cm thick.
  • 300g bocconcini
  • 200g silken tofu
  • 50g fresh basil
  • Handful of seed crackers
  • 200g stringless beans, blanched and cooled
  • 2 tbsp extra virgin olive oil
  • Pinch sea salt and pepper

To make dressing, whisk below ingredients thoroughly

  • 1 tbsp miso
  • 1 tbsp cooking sake or mirin
  • 1 Tbspn rice wine vinegar
  • 1 tbsp maple syrup
  • 1/4 tsp chilli flakes


Method

  1. Peel and slice oranges, spray a cooling rack and place over a couple of gas hobs and let it heat up, once hot, start placing orange rounds down and wait until they start getting some char colour.
  2. Blanch green beans and chill immediately to maintain colour.
  3. Whip tofu down and start placing chargrilled oranges down rustically, tear beans and place loosely, tear bocconcini and place, then basil and finally crumble the seed crackers.
  4. To finish, lightly dress with miso dressing and drizzle with extra virgin olive oil, you can season with a bit of sea salt and pepper too at this point.
  5. Keep in the fridge until required, you can make the different components in a day in advance and plate just before serving if you prefer.
