Story: Spanish Baked Eggs

Teresa turns everyday staples into a delicious comfort meal with Australian Golden Eggs.
Ingredients:
- 1 tablespoon extra-virgin olive oil
- 1 onion, finely sliced
- 2 cloves of garlic, chopped
- 2 x 400g tinned chopped tomatoes
- 1 x 400g tinned butter beans or cannellini beans
- 1 generous teaspoon of smoky paprika
- 1 red capsicum
- 4 free range eggs
- 60g of feta cheese
- 2 sprigs of fresh oregano or parsley, chopped
- Sea salt flakes
Method:
- Pre-heat your oven to 180°C fan forced.
- Cook onions until soft with the olive oil.
- Add garlic, tomatoes, beans, paprika and red capsicum. Season with salt and pepper. Cook, stirring, for 10 minutes or until hot.
- Make 4 small wells in the tomato bean mixture. Break the eggs, one at a time, into each well.
- Bake in the oven for 10 minutes or until the egg white is cooked and the yolks are slightly runny.
- Garnish with feta and parsley. Serve with sourdough and enjoy.
