Story: Soy, Mirin & Citrus Snapper

Cyndal serves up a portion of baked snapper using fresh and fragrant ingredients.
Ingredients:
- One fillet of Snapper, ideally fresh but from frozen is ok
- 2-3 oranges
- 1 fennel
- 1 zucchini
- Soy sauce
- Mirin
- 1 bunch of coriander
Method:
- Slice some oranges. Skin is fine to use, though you can also take it off if you prefer to; it does add some bitterness, but I like that.
- On a mandolin, finely slice fennel and zucchini. You can also use a peeler for the zucchini if you want.
- Next, lay out a large piece of baking paper on an oven tray.
- Place a generous slice of snapper onto the baking paper.
- You can use frozen, but fresh snapper is always best.
Place the fish on the paper and follow with the fennel, zucchini, orange, then add soy, mirin, a squeeze of any leftover orange, and some coriander.
- Wrap your fish up — take your time with this — and bake it in the oven for 15 minutes. The fish steaming inside will hold in the moisture and create its own sauce.
